Histamine:

Histamine is an organic nitrogen compound involved in local immune responses as well as regulating physiological function in the gut and acting as a neurotransmitter. Histamine triggers the inflammatory response. As part of an immune response to foreign pathogens, histamine is produced by basophils and by mast cells found in nearby connective tissues. Histamine increases the permeability of the capillaries to white blood cells and some proteins, to allow them to engage pathogens in the infected tissues.
As an integral part of the immune system, histamine may be involved in immune system disorders and allergies.

Histamine Rich Foods (included Fermented Foods)

- Alcoholic beverages, especially beer and wine.
- Anchovies.
- Strawberries, raspberry, papaya, bananas, kiwi, pineapple, mango tangerines, grapefruits, red prunes and pears.
- Cheeses, especially aged or fermented cheeses (Parmesan style and blue veins).
- Cider and home-made beer, brewer's yeast.
- Dried fruits such as apricots, dates, prunes, figs, cherries and raisins (you may be able to eat these fruits - without reaction - if the fruit is thoroughly washed).
- Pizza
- Fermented foods, such as pickled or smoked meats (bacon), sauerkraut, soy sauce etc.
- Coffee, black tea or herbal teas, cola soft drinks.
- Peanuts, cashews, walnuts, sunflower seeds,
- Processed meats - sausage, hot dogs, salami, etc.
- Smoked fish - herring, sardines, mackerel tc.
- Sour cream, sour milk, buttermilk, yogurt - especially if not fresh.
- Bread and confectionery made with yeast - soured breads, such as pumpernickel, coffee-cakes and other foods made with large amounts of yeast.
- Spinach, tomatoes, eggplant, avocados, peas, mushrooms and canned vegetables as well as commercially prepared salads.
- Red wine vinegar, balsamic vinegar - Vinegar or vinegar-containing foods, such as mayonnaise, salad dressing, tomato sauce, chili sauce, pickles, relishes, olives.
- Mustard, cinnamon, nutmeg, cloves, chili and curry powders, anise, hot paprika (cayenne).
